I was spoiled by the wide variety of very tasty instant soups that were available during a recent tramping holiday in New Zealand – Thai Chicken Curry, Roasted Pumpkin Garlic, YUM! Options were far narrower when I returned home, and I was determined to expand my homemade backpack meal repertoire to include some instant cream soups. Look in the recipes in this section for a couple of trail-tested options. I have had good success with purchased cream-base powder which is a versatile ingredient to have at home anyway to punch up the richness of a range of recipes without as much fat – available from Pack-It Gourmet and in larger quantities less expensively on Amazon.
